2、Ingredients
Chicken Wings & Marinade
- 2 tablespoons olive oil
- 2 tablespoons light brown sugar
- 2 teaspoons smoked paprika
- 2 teaspoons onion powder
- 1 teaspoon garlic powder
- 1 teaspoon salt
- ½ teaspoon black pepper
- 3 lb (about 1.36 kg) chicken wings, separated into flats and drumettes
Buffalo Sauce
- ¼ cup hot sauce
- ¼ cup melted butter

3、Instructions
Mix the marinade
In a clean large bowl, combine the olive oil, brown sugar, smoked paprika, onion powder, garlic powder, salt, and black pepper. Stir until well blended.

Marinate the wings
Add the chicken wings to the bowl and toss until every piece is evenly coated with the marinade. Cover and refrigerate for 15–20 minutes.

Preheat the grill
Preheat a gas grill to medium-high heat, about 400°F (about 204°C). Preheating usually takes 10–15 minutes. Lightly oil the grates before grilling to reduce sticking.

Start grilling
Remove the wings from the marinade, let the excess drip off, and place them directly on the grill. Discard any leftover marinade — do not reuse it.
Grill until cooked through and crispy
Grill for about 25–30 minutes, turning occasionally, until the wings are golden brown with crispy skin and no longer pink inside. The internal temperature should reach 175°F (about 79°C) at the center; this temperature helps the meat pull away from the bone more easily.

Make the Buffalo sauce
While the wings are grilling, combine the hot sauce and melted butter in a bowl. Stir until the butter is fully incorporated and the sauce is smooth and even.

Toss and serve
Transfer the grilled wings to a large bowl, pour the Buffalo sauce over, and toss until every wing is evenly coated. Serve right away.

4、Tips for Success
- Pat the wings dry before they hit the grill; excess moisture will steam the skin and keep it from crisping up.
- Preheat the grill thoroughly — insufficient heat leads to unevenly cooked wings.
- Don't move the wings too early; wait until a seared crust forms before turning them — they'll release from the grates much more easily.
- Keep the lid closed as much as possible between turns to maintain a steady temperature and reduce flare-ups from dripping fat.
- Split whole wings first if using them: separate into drumettes, flats, and tips. This recipe uses drumettes and flats.
- Marinating time: The main recipe calls for 15–20 minutes, but you can extend it up to about 4 hours — always marinate in the refrigerator.
5、Optional Variations
- Back-to-grill glaze: After tossing the wings in Buffalo sauce, return them to the grill for 1–2 minutes so the sauce lightly caramelizes and clings better. Watch carefully to prevent burning.
- Garlic Parmesan: Melt 3 tablespoons of butter with 3 minced garlic cloves, toss with the wings, then sprinkle with ¼ cup grated Parmesan.
- Honey garlic: Mix 3 tablespoons of honey, 1 tablespoon of soy sauce, and 2 minced garlic cloves; toss with the wings as soon as they come off the grill.
- BBQ style: Replace the Buffalo sauce with about ½ cup of BBQ sauce and toss with the wings straight off the grill.
- Herb finish: Sprinkle chopped fresh chives over the wings before serving.
